Cocoa Peanut Butter Overnight Oats 

Category: Breakfast

Yields 2 Servings

Prep Time 5 minutes

Total time 8 hrs (overnight) 

Ingredients

1 heaping cup rolled oats (GF if needed)

3 Tbsp chia seeds

2 Tbsp cocoa powder

1½ Tbsp coconut sugar

Pinch of salt

2 cups (16 fl oz) Unsweetened Ripple Milk (plain or vanilla) 

1 tsp pure vanilla extract

2 Tbsp Peanut Butter, room temp and runny


Optional Toppings

Fresh Fruit (berries, sliced banana)

Sprinkle of Hemp hearts

Peanut/nut butter


Method 

In a small bowl, using a fork or whisk, mix together oats, chia seeds, cocoa powder, coconut sugar, and salt. 

Stir in milk, vanilla extract, and peanut butter. 

Whisk together until well incorporated.

Divide into glass mason jars, seal with a lid, and refrigerate for 8 hours (overnight).

Before serving, add optional toppings.

Dig in!
